Traditionally, Thais made curry pastes from scratch at home everyday for their meals. Sitting with a large stone pestle and mortar, they made small batches, hand-grinding the fresh chillies, garlic, kaffir lime leaves, onion and aromatic spices into a fresh paste. Today, however, modern schedules see many Thais buying curry pastes from street vendors or in the markets.
